the 5 ingredients
salmon frying in extra virgin olive oil
chili-crusted salmon served with quinoa and steamed broccoli
This is one of my favorite recipes, and it also happens to be one of Justin's favorites. I adapted it from this Real Simple recipe.
3 T. chili powder
1 t. dried oregano
1/2 t. kosher salt
2 salmon fillets
1 1/2 T. extra virgin olive oil
In a small bowl mix together chili powder, dried oregano, and kosher salt. Place the salmon fillets on a cutting board and pat the spice mixture onto the fillets forming a sort of crust. Pour the olive oil into a frying pan and set to low to medium heat. Place chili-crusted salmon fillets in the pan and cook about 4 minutes per side until fish is done but not over-cooked.
